Toronto Restaurants Ultimate Cocktail Guide – Superfly Spritz

If there’s ever been a summer of spritz, it’s been this one. 

Despite Rebekah Peppler’s New York Times article, “The Aperol Spritz Is Not a Good Drink” in May that resulted in #Spritzgate2019, the marketing machine of the eponymous Italian aperitif mixed with Prosecco and soda, soared to new heights this season - with whole patios seemingly dedicated to an aperitif custom that originated in Veneto roughly a hundred years ago.

Except that’s not the only spritz in town. In fact, there’s a sophisticated sipper you need in your life right now. And lucky for you, it happens to be at one of Toronto’s best new haunts, Superfly.

Co-owner Alex Pearce says, “We do a lot of spritzes. We want to showcase something better, refreshing, with bold flavour.” So he created a version that “is less sweet, less boozy than sangria.”

The jovial summer refresher boasts an intriguing depth and stunning crimson hue.

And with just four ingredients, it’s easy to pull together quickly (Good, because there’s no chance of having just one). 

The spritz of summer has arrived. It’s this one.

Superfly Spritz

1.5oz Red Wine 
1oz Campari 
0.75oz Fresh Lemon Juice 
0.75oz Simple Syrup

Directions:

Shake all the ingredients and strain into a tall glass with ice. 

Garnish with a bunch of mint.
